JUDY’S FAVOURITE SUMMER LUNCH
Left Over Salmon Salad
INGREDIENTS
- Left over cheesy baked salmon (or any leftover meat)
- 4 slices of Havarti cheese (substitute for goat cheese or any of your preference)
- 1 ½ cups of mixed organic leafy greens
- ½ baby cucumber sliced
- 6 Cherry tomatoes (mix up with different coloured tomatoes)
- 6 Sicilian green olives (or any olives of your choice)
- Few strips of roasted red peppers (I buy prepared in a jar)
- Small sprinkling of walnuts (or nuts of your choice, I use unsalted organic nuts)
DRESSING
- Drizzle with olive oil & reduced balsamic vinegar
